Blueberry Muffins

Ingredients
| 1 1/2 cup flour | 1/4 cup oil |
| 1/2 cup sugar | 1/2 cup buttermilk |
| 2 tsp baking powder | 1 egg |
| 1/2 tsp salt | 1 cup blueberries (frozen or fresh) |
| 1/2 tsp vanilla (optional)t |
Directions
Mix dry ingredients. Mix wet ingredients. Add dry ingredients to wet. Fold in blueberries.
Bake at 375ºF for 20 to 25 minutes.
Streusel Topping (optional)
This makes a fair amount of topping
| 1/2 cup sugar | 1/3 cup flour |
| 1/2 tsp cinnamon | 1/4 cup butter or margarine |
Directions
Mix and sprinkle on top of muffins before baking.
Yields 9-10 regular size muffins.
