Coconut Ice Cream

Ingredients

  • 2 (14 oz) cans Coconut Milk
  • 1/2 cup honey
  • 1/4 tsp Salt
  • 2 T Corn Starch (Arrowroot)
  • 2 egg yolk (Optional)
  • 1 tsp Vanilla

Instructions

  1. Set aside 1/2 cup of coconut milk in a small bowl.
  2. Heat coconut milk, honey, and salt on medium heat to melt the honey
  3. Whisk together the 1/2 cup coconut milk, cornstarch, and egg yolks.  Add to warm mixture. Heat until thick - DO NOT BOIL
  4. Pour into a shallow container, stir in vanilla
  5. Set in the fridge for 4 hours
  6. Make in an ice cream maker according to directions
