Coconut Ice Cream

Ingredients
- 2 (14 oz) cans Coconut Milk
- 1/2 cup honey
- 1/4 tsp Salt
- 2 T Corn Starch (Arrowroot)
- 2 egg yolk (Optional)
- 1 tsp Vanilla
Instructions
- Set aside 1/2 cup of coconut milk in a small bowl.
- Heat coconut milk, honey, and salt on medium heat to melt the honey
- Whisk together the 1/2 cup coconut milk, cornstarch, and egg yolks. Add to warm mixture. Heat until thick - DO NOT BOIL
- Pour into a shallow container, stir in vanilla
- Set in the fridge for 4 hours
- Make in an ice cream maker according to directions
