Homemade Italian Dressing

I use this as my general guide for a dressing over the pasta veggie chicken salad i have on this blog. I needed double it and i used herb de provenance, garlic power, onion flakes as i didn't want to eat raw onions in the salad.

Coconut Ice Cream

Ingredients

  • 2 (14 oz) cans Coconut Milk
  • 1/2 cup honey
  • 1/4 tsp Salt
  • 2 T Corn Starch (Arrowroot)
  • 2 egg yolk (Optional)
  • 1 tsp Vanilla

Instructions

  1. Set aside 1/2 cup of coconut milk in a small bowl.
  2. Heat coconut milk, honey, and salt on medium heat to melt the honey
  3. Whisk together the 1/2 cup coconut milk, cornstarch, and egg yolks.  Add to warm mixture. Heat until thick - DO NOT BOIL
  4. Pour into a shallow container, stir in vanilla
  5. Set in the fridge for 4 hours
  6. Make in an ice cream maker according to directions

Belgian Cookies

Needs to be prepared the day before and refrigerated overnight otherwise it's very sticky and unruly.
Works best with sticks of dairy-free butter. It doesn't get as crunchy as with actual butter but still very delicious
I prefer a Spiced Rum like Krakken for a better flavor


Ingredients

1 lb Butter - softened but not melted 1 Tbsp Salt
5 cups Sugar 1 Tbsp Vanilla
6 eggs 1 - 2 oz shot of Brandy / Spiced Rum

Directions
Cream the softened butter and sugar add the eggs, vanilla and Rum / Brandy mix in flour and salt batter will be stiff and very sticky, refrigerate at least a couple hours or overnight.

When batter is firm portion into balls about walnut sized (use 1 - 1 1/2 Tbsp dough scoop) Cook for 1 min in cookie iron cool on rack then store in air tight container
